In veg news, a recently released book highlights the plant-based diet for health and sustainability. Acclaimed vegan Canadian athlete, author, and speaker, Mr. Brendan Brazier, spoke about “Whole Foods to Thrive.” Brendan Brazier (Vegan) Acclaimed athlete, author, vegan advocate Canada (In English) Brendan Brazier (m his new book has 200 recipes that are all plant-based whole foods. Two-thirds are recipes, the other third is an environmental food issues book. So it’s looking at the amount of resources used to produce food, land, water, fossil fuel, and the emissions created. ANCHO n the book, Mr. Brazier introduces the “Nutrient-to-Resource Ratio” which describes how to get as many vitamins, minerals, phytochemicals, and antioxidants while using the least amount of natural resources.
