Quinoa Heart of Palm Salad Recipe for a Gluten-Free Diet



Ursul i I'm Ursula Ridens, registered dietitian at Sharp HealthCare. Today we're going to be cooking up some tasty gluten-free recipes. And here to help me do that is Chef Bernard from the Marine Room in La Jolla. Chef Bernar nd my favorite red quinoa. You have to understand, I am gluten-free as well. And these recipes are what I cook at my house. So I am using red quinoa. Tell us more about it. Ursul uinoa is fantastic. Not only because it's gluten-free, but it's very high in fiber and protein. So you're getting a lot bang for your buck with this grain. And actually, I should say that quinoa is a seed, not a grain. And a lot of people do get confused by that. Chef Bernar hat I did is put a little bit of tangerine juice and a little bit of zest. And as you can see, with the remaining ingredients on our table. Please tell us about it. Ursul kay, so we have tomatoes that are very high in lycopene and with that lycopene it is helpful in reducing the risk for cancer. Hearts of palm, fantastic. Add red onion for some flavor and some color, and cucumber. We have some nice crunch here. Now, whether your health requires you to eat gluten-free or not, this is a very healthy dish. The quinoa actually has a component called saponins that helps to reduce cholesterol. When you're getting ready to prepare your quinoa, I understand you have to rinse it, is that correct? Chef Bernar ou need to rinse it, and it's really simple. It is two parts water to one part quinoa. What I'm adding to this dish is my favorite oil, local oil also, which is extra virgin avocado oil. Very important, with all those ingredients, go to your farmer's market. Not only are you able to get the best nutrients, you are also able to support your local farming community. It's wonderful. Ursul hat's fantastic. When you're rinsing your quinoa do that briefly. We do want to rinse off that bitter taste, but if you rinse it for too long, then you are rinsing away that component that helps to lower cholesterol. Chef Bernar dding a bit of sea salt and pepper. Sea salt is so delicious, but in moderation. Ursul n moderation, because it does have the same sodium content as table salt. But it does make for a delicious dish. Chef Bernar ow you want to make sure to add that extra flavor, what you do is take some beautiful basil and just slice it. Remember, you want to chop it only one time, the more you chop it, the more it oxidizes and the less fragrance it adds. This is our last touch. Ursul e also don't want to lose that health benefit either from that basil which is an anti-inflammatory. That looks absolutely delicious.
